Homemade Marshmallow & Hot Cocoa Workshop

This workshop is offered in partnership with Zero-Waste Nonprofit, MudLab Oakland and Holistic Nutritionist, Megan Knipp Nutrition as part of their Sustainable Nutrition Series.

We are making zero-waste marshmallows and hot cocoa from scratch in your home kitchen. Once you make the homemade version, there will be no going back to the store-bought variety. We will demonstrate ways to get creative and make the marshmallows your own with flavor substitutions and various preparations. As always, Megan will infuse the workshop with a little history of the Marshmallow and the healing properties of each ingredient.


What better time to learn the art of this classic holiday duo? Perfect for cozy winter nights. This pair also makes a great zero-waste, homemade gift for the holidays.

Vegan Friendly Option: Recipes for both gelatin-based and vegan-friendly marshmallows provided prior to workshop, depending on dietary preference. Megan will walk through how to prepare both recipes, however please choose one recipe to follow.

All kitchen skill levels welcome!

Mindful Eating for the Holidays: Seasonal Snack Board Making Workshop + Mindful Eating Meditation

Mindful Eating is an effective tool to reduce the experience of food anxiety and mend your relationship with food. Learn about Mindful Eating while you prepare and eat a delicious snack board of your own creation! In this workshop, you will learn the key concepts of Mindful Eating and how integrate the practice into your approach to food. Megan will illustrate the practice of Mindfulness by building your own Seasonal Snack Board. She will then lead the group through a guided mindful eating meditation as we all enjoy the fruits of labor. Prior to the workshop, you will receive a list of supplies, food suggestions, and allergy-friendly recipes to help build your board. 


In this 75 minute workshop we will:

  • Review the Principles of Mindful Eating and learn how to apply them to your daily meal preparation and enjoyment

  • Learn useful Mindfulness tools and other non-diet strategies to soothe food anxiety during the holiday season

  • Have fun building your perfect Seasonal Charcuterie board for the senses with color, texture, and flavor.

  • Get to know seasonal ingredients, their benefits, and ways to cook with them

  • Enjoy your prepared Charcuterie board while engaging in a guided Mindful Eating Meditation.


** This workshop is meant to educate participants on how to use Mindful Eating as a tool to reduce food anxiety. It is geared towards those wanting to learn more about Mindful Eating, those on a specific nutrition protocol to support a chronic health condition, and/or those who have an awareness of their relationship to disordered eating and want to explore ways to heal. This workshop is not meant to replace treatment for an eating disorder. This material may be triggering for those in recovery from an eating disorder, past or present. All are welcome and encouraged to attend, however please reach out to Megan for clarity on whether it is right for you.

Join Megan for a Simple Pickle Recipe Demo! Making your own pickled vegetables is an easy way to extend the shelf life of produce, practice zero waste, support gut health, and add a zesty flavor punch to your meals. Pickling can be intimidating, but it is a pretty simple process. All you really need is some jars, vinegar, and something to pickle… and maybe a little patience. Megan will go over some simple tricks and tips to de-mystify the pickle process. We will run through how to master (and how to eat!) your own original, simple pickled condiments:

  • Watermelon Rind

  • Pickled Garden Veg/ Giardiniera / “Whatever you’ve got”

  • Classic Dill Pickles


If you want to follow along you will need:

1.     Sterile wide mouth glass jars : How to Sterilize Jars for Pickling

Craft naturally fizzy soda right from your home kitchen with Megan. You need only three ingredients to get started: ginger, sugar and water… and patience. First, we will go over how to make a Ginger Bug, the starter necessary for making naturally fermented sodas. Then students will learn step-by-step how to transform the Ginger Bug into naturally fermented Berry Ginger Soda and Root Beer. Megan will give insights on the health benefits of naturally fermented foods and selected herbs, great for healing digestion and liver health.

We are hosting a class on sustainable, budget-friendly spreads: Summer Chia Jam & Sunflower Seed Butter. Megan will be demoing these two simple recipes for nutritious seasonal jam and seed butters, with some guidance on the health benefits, food history, and pro tips for taste variations to make them your own. The obvious way to enjoy is slathered on a slice of toast, but Megan will cover some other ways to incorporate into meals – like sunflower butter ranch dressing & no bake cookies.

 

Why make your own instead of buying? Because if you have an extra 10-20 minutes, you can save some money, support your health, and reduce waste. Plus, you can make a double-triple batch to store for later or share with a friend. Building sustainable kitchen skills to foster food independence and share your craft with your community is what kitchen sustainability is all about.

Introducing The Mood Food Series

Mood food is about “good food” for supporting all of our dynamic moods, to live in full spectrum of colorful expression. We want anger. We want ecstasy. We want grief. We want whimsy. We want fear. We want joy. We want to feel each of these lessons and nourish the mind and body in the process. That is Mood Food.

In partnership with Brooke Wilson from Summer Thyme Wellness, We created the Mood Food Series to demonstrate nourishing practices that solder the mindbody connection. The Mindful Workshop Series is a set of three 1-hour workshops focused on cultivating joy and nourishment from food.

Mindful Nourishment: A Meditative Eating Workshop


This workshop is a practice in Mindful Eating, the gift of slowing down, tuning into what your body needs so you can properly nourish yourself. With Megan as your guide, you will be led through a mindful nourishment experience from start to finish. We will start by demonstrating how your nervous system can be soothed through mindful eating practices.  Then, you’ll learn meditative tools through a guided Mindful Eating Mediation to raise non-judgmental awareness and appreciation of the sensory aspects of food: source, taste, sound, smell, texture, appearance. 

Join us for a relaxing, fun, and eye-opening experience!  All you have to do is bring yourself, an open mind, and a food or beverage to enjoy during the workshop.

Learn the pro tips to sustainable food prep with Holistic Nutritionist and Chef Megan Knipp. We’ll use the stalks, stems, leaves, and roots to build a zero-waste, nourishing meal for the week ahead. All skill levels welcome!

Roast Winter Veggie Pasta with Fennel Frond Pesto. Gluten-free polenta available. Pasta provided by local Community Grains.

They all have their place in this (sometimes wacky) wellness world, and it is true, Spring is an excellent time for a "fresh start". But these words are too often placed in front of services or products that may or may not be doing your body good. Think Activated Charcoal Smoothies, Water Fasting, and #celeryjuice. As a health and wellness professional, I find these trends in the wellness industry frustrating. What frustrates me about these trends is exactly that, they are trends. Hyped fixes that are marketed to the public as the next thing to heal your problem. I'm offering a chance to discuss these trends and offer insight into healthy detox. 

Let's debunk some common misconceptions around detoxification. We will go over:
